NAMIURA is a small, sharp ramen counter on the upper floors above Shinjuku, opened in mid-2025 and already pulling a regular crowd. The signature is a thick tonkotsu-gyokai tsukemen, where the broth is layered with pork-bone depth and a generous hit of Japanese sancho pepper that gives it a distinct, numbing kick.\n\nThe accompanying noodles are chewy, wholemeal, house-made and served on the side for dipping. The seafood ramen nods to Korean champon-style ideas, and there is a serious selection of table condiments, including yuzu powder, plum and rayu, for diners who like to remix their bowl as they go.\n\nFor a Shinjuku ramen stop that is a step away from the classic soy-salt canon and is fun to eat, NAMIURA is a worthy addition to a ramen crawl.
